Job Title: Executive Sous Chef

Reporting To: Executive Chef - Dalvay by the Sea - D.P. Murphy Hotels

Terms of Employment: Full Time - Days, Evenings & Weekends

This role has a start date of April 2024 through October 2024.

Location: Dalvay by the Sea, Prince Edward Island

Job Description: As the Executive Sous Chef at the prestigious Dalvay by the Sea, part of D.P. Murphy Hotels, you will play a vital role in supporting the Executive Chef in all aspects of kitchen management. This position is key to maintaining the high culinary standards of our establishment, and involves overseeing kitchen operations, mentoring junior chefs, and ensuring quality and consistency in our culinary offerings.

Position Responsibilities And Expectations

  • Assist the Executive Chef in overseeing and managing kitchen operations.
  • Update and manage work schedules for kitchen staff.
  • Ensure adherence to our recipe review program and culinary standards.
  • Monitor and correct food preparation processes, applying the Culinary Check List.
  • Oversee and control the quality of fresh fish and other food items.
  • Train and mentor new cooks, monitoring their progression.
  • Maintain consistency and quality in food taste, aligning with established recipes and presentations.
  • Liaise with the Provision section for optimal use of perishable items.
  • Supervise and guide junior chefs, ensuring compliance with organizational policies.
  • Manage food inventory, ordering, and kitchen supplies.
  • Stand in for the Executive Chef as needed and manage the kitchen in their absence.

Job Qualifications & Requirements

  • Diploma or Certificate in Culinary Arts or comparable education preferred.
  • Food-safe Certificate is highly valued.
  • Proven experience in kitchen management and culinary leadership.
  • Strong ability to work fiexible hours, including evenings, weekends, and special events.
  • Excellent leadership and communication skills.
  • Physical stamina to handle a busy kitchen environment, including the ability to stand for long periods and lift at least 30 pounds.
